Love preparing traditional Nigerian dishes but prefer a plant-derived alternative to regular potash? Ita Ngu is a great ingredient to have in your kitchen!

Ita Ngu, also known as Ngu, is a traditional alkaline cooking ingredient made from plant ash, commonly from burnt palm fruit bunches or stalks. It has been used for generations in Nigerian cooking as an alternative to mineral potash (Akanwu).

Ita Ngu is especially useful when preparing dishes that need palm oil to thicken into that familiar creamy consistency, such as Abacha, Nkwobi, and Isi Ewu. It can also help soften Ukwa (African Breadfruit) during cooking.

For anyone who loves traditional Nigerian cooking, Ita Ngu offers a familiar, plant-derived way to achieve the taste and texture of beloved native dishes.

Perfect for: Abacha (African Salad), Ugba, Nkwobi, Isi Ewu, Ukwa (African Breadfruit), and other traditional Nigerian dishes that call for a cooking alkali.

Why Choose Ita Ngu?

✔ Traditional plant-derived alternative to mineral potash
✔ Helps achieve the creamy palm oil consistency used in native dishes
✔ Can help soften Ukwa during cooking
✔ Useful for preparing authentic Igbo delicacies
✔ A familiar ingredient in traditional Nigerian cooking
✔ Simple to prepare using water and careful straining
✔ Allows you to enjoy traditional recipes using a plant-based cooking ingredient

How to Prepare Ita Ngu for Cooking

  1. Soak: Place a small quantity of food-grade Ita Ngu in a clean bowl and add drinking-quality water. Stir and allow it to settle.

  2. First straining: Carefully pour the liquid through a fine sieve or clean food-safe filter, leaving the sand, ash particles, and sediment behind.

  3. Second straining: Strain the collected liquid again through a fresh, fine filter to remove any remaining visible particles.

  4. Use the clear liquid: Add a small amount of the strained liquid to your cooking as required by your recipe. Discard the residue.

Important: Always strain at least twice to help remove visible grit and sediment. Straining does not eliminate dissolved contaminants or guarantee food safety, so use only Ita Ngu that is specifically prepared and sold for food use.

Traditional cooking, familiar taste! Enjoy your favorite Nigerian native dishes with Ita Ngu, a plant-derived alternative to regular potash.
